Mung beans are small, green beans with high nutritional value and multiple health benefits. They are rich in protein, fiber, vitamins (B, C, E), minerals (iron, magnesium, potassium) and antioxidants. Mung beans are the fruit of the plant known to livestock farmers as Rovi. In Greece, they have been cultivated since ancient times and are referred to by the name orovos. Mung beans are a type of bean. They are green in color and small in size, about the same size as lentils. They are easy to cook because they do not need to be soaked in water first. They are used to prepare both sweet and savory dishes. They have enough iron and protein, which makes them popular in vegetarian diets. It is easy to sprout if we soak it and it can be consumed in this form. Abroad it is known as Mung bean. It is widely cultivated in East and Southeast Asia and also in India and is used a lot in their cuisine. In Greece it is not particularly widespread and domestic demand is mainly covered by imports from Australia. However, there are several growers in Kalamata and some in Kalavryta (rovitsa stew is a local specialty)
